Goose Manor Pays Tribute to Their Time-honoured Roast Goose with A Brand New Menu

Goose Manor

A Celebration of World Cuisines

Founded in 1958, the famous eatery – Yue Kee Roast Goose Restaurant is marking its 60th anniversary. Using Black-beard Goose from Qingyuan, their signature roast goose is grilled in a  traditional Chinese charcoal barbecue style. With sixty years of experience, the classic delicacy channels both fragrance and flavour.

Now run by the third generation of the “Ng” family, the historic Cantonese barbecue restaurant has recently expanded beyond Sham Tseng. Located on Ashley Road, in the heart of Tsim Sha Tsui, Goose Manor brings in localities of Sham Tseng and the traditional flavours of the area to the bustling city scene.

Preserving Yue Kee’s famous roast goose, the modern-styled restaurant does not compromise on their quality. Handpicking fresh local produce and premium ingredients from overseas, the restaurant strives to offer exceptional flavours and original experiences. “At Goose Manor, we roast our poultry on high with gas. Compared to traditional charcoal flames, our technique eliminates the excess oil from the goose, making it crispy on the outside and succulent on the inside, without being surfeiting.” one of the founders of Goose Manor – Mr Ng Kwok Han.

Fried Golden Prawns – A favourite Cantonese classic of Hong KongGoose Manor selects fresh Vietnamese prawns, larger than most in the market. Ranging from 20 to 30 tail catties, the fresh prawns are tender yet satisfying to taste. Freshly shelled and deep-fried until golden perfection, the prawns are then tossed with a house blend of salted egg yolk butter sauce.

Salt and Pepper Squid Stuffed with Shrimp Paste  – the creative union of squid and shrimp. Combining freshness and umami, chopped squid are blended with Goose Manor’s homemade shrimp paste. This marinade is then stuffed into each piece of squid, covered in batter, and deep fried until golden. The intricate process produces superb flavour and texture. The dish is prepared in the old-fashioned way, using chopped garlic, spring onions and chillies, the “wet peppers” method retains the freshness and aromas of spices, and then stir-fried with five-spice,  salt and pepper.

Abalone Risotto – a taste of luxury. Each risotto comes with two Japanese-farmed superior abalones. Soaked for 2-3 days, the abalones are placed into a concentrate of pork knuckle, ham, and stock, simmered until softened, chewy in texture, and rich in flavour.. The abalone-soaked stock is then used to braise the rice with added shrimps and shiitake mushrooms. The abalone risotto is a luxurious embodiment of Cantonese cuisine’s textural variety and superior taste.

The Culinary Lead

Sham Tseng’s roast goose is known for its rich flavour, juicy and tender meat. Transcending the legacy, Goose Manor has inherited the vigor of Yue Kee Roasted Goose Restaurant.Goose Manor has made bringing the succulent roast goose delicacy to Tsim Sha Tsui its mission, alongside offering consistently outstanding quality.
“Goose Manor” was coined by the family’s grandfather, Mr Ng Chun-yin. Starting their first brick and mortar shop in 1958, the grandparents founded Yue Kee Roasted Goose Restaurant, selling their signature roast goose while serving meals to neighbouring workers. With dedication to both the restaurant and Cantonese culinary arts, Yue Kee has always been striving to refine our grilling and roasting techniques.
